A beautifully caramelized roast pork loin glazed with honey, garlic, and warm spices is the kind of centerpiece that makes a weeknight feel like a special occasion. The glaze comes together in minutes on the stovetop — raw honey, coconut aminos, fresh ginger, apple cider vinegar, and turmeric — and gets layered onto the pork twice during roasting so every slice is sticky, fragrant, and deeply flavorful. Coconut aminos stand in for soy sauce here, which means the whole dish stays completely free of legume-derived ingredients without sacrificing any of that savory depth. Searing the loin in coconut oil before it goes into the oven builds a gorgeous golden crust that locks in the juices and gives the glaze something to cling to. A reserved portion of the glaze gets drizzled over the sliced pork at the end, so you get a bright, punchy hit of garlic and ginger in every bite. Resting the meat before slicing is the one step you don't want to skip — it keeps things tender and juicy all the way through. Finish with a scatter of fresh parsley and you've got a showstopper that's as clean and simple as it looks impressive.

Remove the pork loin from the refrigerator 30 minutes before cooking. Preheat the oven to 400°F (205°C).
In a small saucepan over medium-low heat, combine the honey, coconut aminos, minced garlic, grated ginger, apple cider vinegar, and 1/4 tsp turmeric. Stir and cook for 3–4 minutes, until the garlic is fragrant and the glaze has thickened slightly and coats the back of a spoon. Remove from heat and set aside. Reserve 2 tablespoons of the glaze in a separate small bowl to use as a finishing sauce after the pork is cooked.
