There is something deeply satisfying about a roast that looks and tastes like it came from a fancy restaurant but was built entirely from real, recognizable ingredients. This one gets its sticky, glossy coating from raw honey, coconut aminos, fresh garlic, and grated ginger — no flavor packets, no bottled marinades, nothing with a suspiciously long ingredient list. Coconut aminos does a lot of heavy lifting here, delivering that savory, slightly sweet depth you'd expect from soy sauce without any of the additives that sneak into conventional versions. The glaze is made from scratch in a small saucepan in just a few minutes, so you know exactly what's going into it. Searing the pork first builds a gorgeous golden crust, and then the oven does the rest, caramelizing each layer of glaze into something rich and deeply fragrant. A reserved portion of the glaze gets drizzled over the sliced pork at the end, which keeps every bite juicy and punchy. Fresh parsley adds a bright finish, and the whole thing rests beautifully on a cutting board before serving — clean, wholesome, and genuinely impressive.

Remove the pork loin from the refrigerator 30 minutes before cooking. Preheat the oven to 400°F (205°C).
In a small saucepan over medium-low heat, combine the honey, coconut aminos, minced garlic, grated ginger, apple cider vinegar, and 1/4 tsp turmeric. Stir and cook for 3–4 minutes, until the garlic is fragrant and the glaze has thickened slightly and coats the back of a spoon. Remove from heat and set aside. Reserve 2 tablespoons of the glaze in a separate small bowl to use as a finishing sauce after the pork is cooked.
