This vibrant drink is everything a summer refresher should be — jewel-toned, lightly sweet, and genuinely refreshing without a drop of anything processed. The blueberry syrup comes together in just a few minutes on the stovetop, where fresh berries and honey cook down into a gorgeous deep-purple concentrate that smells absolutely incredible. A small splash of apple cider vinegar at the end adds a subtle brightness that keeps the sweetness from feeling heavy. Strained smooth and poured over ice with chilled coconut water, the whole thing tastes like something you'd pay too much for at a trendy café. Avoiding refined seed oils in drinks can be trickier than it sounds — many store-bought flavored beverages and syrups sneak in canola or sunflower oil as an emulsifier or carrier — but every ingredient here is completely clean and straightforward. The natural fats in coconut water are a world away from industrially processed oils, and honey does all the sweetening work with zero additives. Mint is optional, but honestly, don't skip it.

Combine the blueberries, honey, and water in a small saucepan over medium heat. Cook, stirring occasionally, until the blueberries burst and the mixture is deep purple and slightly thickened, about 4–5 minutes.
Remove the pan from the heat and stir in the apple cider vinegar. Pour the mixture through a fine-mesh strainer into a small bowl or measuring cup, pressing the solids with the back of a spoon to extract as much liquid as possible. Discard the solids.
