Fresh blueberries cooked down with honey and a splash of apple cider vinegar create a jewel-toned syrup that's sweet, slightly tart, and genuinely stunning. Once strained and poured over ice with chilled coconut water, the whole drink comes together in minutes with almost zero effort. The coconut water keeps things light and naturally hydrating, while the honey adds just enough floral sweetness to make it feel a little special. A couple of fresh mint leaves on top make it look like something you'd pay too much for at a café — except you made it at home. This is the kind of drink that works equally well as a weekend treat or a weekday pick-me-up when you want something more interesting than plain water. Every ingredient here is clean and straightforward, so you never have to second-guess what's in your glass.

Combine the blueberries, honey, and water in a small saucepan over medium heat. Cook, stirring occasionally, until the blueberries burst and the mixture is deep purple and slightly thickened, about 4–5 minutes.
Remove the pan from the heat and stir in the apple cider vinegar. Pour the mixture through a fine-mesh strainer into a small bowl or measuring cup, pressing the solids with the back of a spoon to extract as much liquid as possible. Discard the solids.
