Combine the blueberries, honey, and water in a small saucepan over medium heat. Cook, stirring occasionally, until the blueberries burst and the mixture is deep purple and slightly thickened, about 4–5 minutes.
Remove the pan from the heat and stir in the apple cider vinegar. Pour the mixture through a fine-mesh strainer into a small bowl or measuring cup, pressing the solids with the back of a spoon to extract as much liquid as possible. Discard the solids.
