Avoiding citric acid in beverages is trickier than it sounds — it hides in flavored drinks, store-bought juices, and even some sparkling waters under names you'd never expect. This refresher sidesteps all of that by building its tartness from a small splash of apple cider vinegar instead, giving you that bright, lively flavor without the additive. Fresh blueberries are simmered down with honey and water into a gorgeous, deep-purple syrup that smells incredible and tastes even better. Coconut water brings a natural sweetness and subtle tropical note that makes the whole drink feel like something you'd order at a fancy café. The syrup comes together in just a few minutes on the stovetop, and once it's strained and cooled, assembly is as simple as pouring over ice. A couple of fresh mint leaves on top make it look polished enough to serve to guests, though you'll probably want to keep the whole batch for yourself.

Combine the blueberries, honey, and water in a small saucepan over medium heat. Cook, stirring occasionally, until the blueberries burst and the mixture is deep purple and slightly thickened, about 4–5 minutes.
Remove the pan from the heat and stir in the apple cider vinegar. Pour the mixture through a fine-mesh strainer into a small bowl or measuring cup, pressing the solids with the back of a spoon to extract as much liquid as possible. Discard the solids.
