This drink is the kind of thing you make once and immediately want every single day — jewel-toned, lightly sweet, and genuinely refreshing. The blueberry syrup comes together in just a few minutes on the stove, where fresh berries, honey, and a splash of apple cider vinegar cook down into something deeply flavorful and naturally vibrant. No artificial preservatives, no synthetic antioxidants, no questionable additives — just real ingredients doing all the work. That matters more than it sounds, because so many bottled drinks and flavored syrups quietly sneak in preservatives that people with sensitivities to BHA or BHT are trying to avoid. Straining the cooked berries gives you a silky, concentrated syrup that swirls beautifully into chilled coconut water over ice. The coconut water keeps things light and hydrating rather than cloying, and a couple of fresh mint leaves on top make it feel like something you'd pay too much for at a café. It's the kind of clean, from-scratch drink that proves you really don't need anything artificial to make something taste this good.

Combine the blueberries, honey, and water in a small saucepan over medium heat. Cook, stirring occasionally, until the blueberries burst and the mixture is deep purple and slightly thickened, about 4–5 minutes.
Remove the pan from the heat and stir in the apple cider vinegar. Pour the mixture through a fine-mesh strainer into a small bowl or measuring cup, pressing the solids with the back of a spoon to extract as much liquid as possible. Discard the solids.
