There is something deeply satisfying about turning two humble ingredients into something this alive and flavorful. Shredded cabbage and a little sea salt are all it takes β the magic happens through natural fermentation, where the cabbage essentially creates its own brine and transforms over the course of a week or two into something tangy, complex, and genuinely good for your gut. Because this is made entirely from scratch with nothing but fresh cabbage and non-iodized salt, you never have to second-guess a label or worry about unexpected additions hiding in a store-bought jar. The process is hands-on in the best way β massaging the cabbage until it goes limp and releases its liquid is oddly therapeutic, and watching the brine rise in the jar over the following days feels like a small kitchen miracle. Tasting it daily as it develops lets you pull it at exactly the sourness you love, whether that's a bright, mild tang at day seven or a deeper, more assertive pucker closer to day fourteen. Once it's chilled and ready, it's incredible piled onto sausages, tucked into sandwiches, or eaten straight from the jar with a fork β no judgment.

Peel off and set aside 1β2 large outer cabbage leaves. Quarter the cabbage, cut out the core, and slice the remaining cabbage into thin shreds about 1/8-inch thick.
Place the shredded cabbage in a large mixing bowl and sprinkle the sea salt evenly over it. Massage and squeeze the cabbage firmly with clean hands for 8β10 minutes, until it has released a significant amount of liquid and feels limp and wet β the brine should pool visibly at the bottom of the bowl.
