The classic Negroni is already a beautifully balanced drink, but bruising fresh rosemary and thyme before stirring takes it somewhere genuinely special — herbal, aromatic, and a little more complex than the version you'd order at a bar. The technique is simple: a few firm presses with the back of a bar spoon coax out the oils without turning the herbs bitter, so every sip carries that fragrant, garden-fresh lift. Equal parts gin, Campari, and sweet vermouth keep the familiar bittersweet backbone intact, while the expressed orange peel adds a bright citrus note right at the finish. Since every ingredient here is naturally free of dairy, there's nothing to swap or substitute — just shake off any habit of scanning labels and enjoy the process. Stirring steadily over ice for a full 30 to 40 seconds is the move that makes this feel properly craft, chilling the drink without diluting it too fast. It's the kind of cocktail that looks impressive on a tray but genuinely takes less than five minutes to pull together.

Place the rosemary sprig and thyme sprigs in the bottom of a mixing glass. Press them firmly with the back of a bar spoon 3–4 times — just enough to bruise the leaves and release their oils without shredding the herbs.
Add the gin, Campari, and sweet vermouth to the mixing glass, then fill with ice. Stir steadily for 30–40 seconds, until the outside of the glass feels well chilled and the liquid is cold throughout.
