The classic Negroni is already a beautifully balanced cocktail, and this herbal riff takes it somewhere even more interesting without adding a drop of sweetener. The bitterness of Campari, the botanicals in the gin, and the richness of sweet vermouth do all the heavy lifting here — no simple syrup, no flavored liqueurs, no hidden sugar bombs required. Fresh rosemary and thyme are gently bruised in the mixing glass, releasing their aromatic oils into the drink before they're strained out entirely, leaving behind a subtle, woodsy depth you can smell before you even take a sip. A firm twist of orange peel over the glass adds a bright citrus note that ties everything together in the most effortless way. The technique is straightforward — bruise, stir, strain, express — and the result feels genuinely sophisticated. If you've been skeptical that a cocktail without sweetened mixers or flavored syrups could still taste complex and satisfying, this one will change your mind fast.

Place the rosemary sprig and thyme sprigs in the bottom of a mixing glass. Press them firmly with the back of a bar spoon 3–4 times — just enough to bruise the leaves and release their oils without shredding the herbs.
Add the gin, Campari, and sweet vermouth to the mixing glass, then fill with ice. Stir steadily for 30–40 seconds, until the outside of the glass feels well chilled and the liquid is cold throughout.
