A whole chicken roasted until the skin turns deep golden and crackly is one of those meals that feels effortless but tastes like a Sunday-long project. Olive oil, garlic, and a mix of fresh thyme, rosemary, parsley, and oregano work into every crevice of the bird, so the flavor runs through the meat instead of sitting on the surface. Underneath, carrots, parsnips, and baby potatoes roast in the same pan, soaking up all those savory drippings as they soften and caramelize at the edges. The two-stage oven temperature does the real work here — a hot blast to crisp the skin, then a gentler finish so the meat stays juicy all the way to the bone. It's a straightforward, produce-forward dinner built on olive oil, herbs, and vegetables, which makes it a natural fit for Mediterranean-style eating. Carve it up, scatter on a little extra parsley, and you've got a simple, wholesome plate that doesn't need much else.

Position a rack in the center of the oven and preheat to 425°F (220°C). Pat the chicken completely dry inside and out with paper towels — the drier the skin, the better it will brown.
In a small bowl, combine 2 tbsp of the olive oil, the salt, chopped parsley, and oregano leaves to form a loose herb paste. Rub this mixture all over the outside of the chicken and under the breast skin wherever you can loosen it.
