Creamy, herby, and deeply satisfying, this turkey skillet is the kind of weeknight dinner that makes elimination-phase eating feel genuinely exciting rather than restrictive. Ground turkey browns in coconut oil with turmeric and ginger, then gets folded back into a luscious sauce built from bone broth and full-fat coconut milk — no dairy, no nightshades, no seed-based thickeners in sight. Arrowroot starch does the thickening work cleanly, giving the sauce that silky, coat-the-back-of-a-spoon texture you'd expect from a much more complicated dish. Carrots and zucchini add color and bite, while a generous finish of fresh chives, dill, and parsley delivers that bright, ranch-forward flavor without any of the conventional shortcuts that would otherwise make this off-limits. A splash of apple cider vinegar and fresh lemon juice at the end lifts everything and keeps the richness from feeling heavy. It comes together in one skillet and serves four, making it an easy go-to whether you're deep in a healing protocol or just cooking clean for the week.

AIP excludes seed-derived spices such as dill seed, but the dill in this recipe is dill weed - the leaf herb, not the seed - so it is likely AIP-compliant.

Heat the coconut oil in a 12-inch skillet over medium-high heat until shimmering. Add the ground turkey, 1/4 tsp of the salt, the ginger, and the turmeric. Cook, breaking the meat into small crumbles with a spatula, until no pink remains and the turkey registers 165°F (74°C) on an instant-read thermometer, about 7–8 minutes. Transfer the cooked turkey to a plate and set aside.
Reduce the heat to medium. Add the garlic to the same skillet and cook, stirring constantly, until fragrant, about 30 seconds, watching closely so it does not brown.
