Slow-braised brisket is one of those dishes that fills the whole house with an aroma that makes everyone wander into the kitchen asking when dinner will be ready. This version builds serious depth of flavor through a long, low oven braise in a braising liquid made with pomegranate juice, apple cider vinegar, and additive-free bone broth ā no thickeners, stabilizers, or gums anywhere in sight. The sear on the brisket is key: a full five to six minutes fat-side down in coconut oil creates that deep, mahogany crust that makes the finished slices look like they came out of a serious restaurant kitchen. Warm spices like turmeric and Ceylon cinnamon weave through the aromatics alongside fresh ginger, garlic, and onion, giving the braising liquid a complexity that goes way beyond a standard pot roast. After three-plus hours in the oven, the meat reaches that coveted 195ā205°F range where it yields to a fork with almost no resistance and slices cleanly against the grain. The carrots and celery braise right alongside the brisket and soak up all of that savory, slightly tangy liquid, so the whole platter comes together as a complete, satisfying meal. It's the kind of recipe that rewards patience and uses nothing but whole, recognizable ingredients from start to finish.
