Slow-braised beef brisket is the kind of meal that fills the whole house with an aroma so good it's hard to wait for dinner. This version builds deep, complex flavor through a long, low oven braise — seared fat-side down in coconut oil first, then nestled into a braising liquid of pomegranate juice, apple cider vinegar, and additive-free bone broth with aromatics like fresh ginger, turmeric, and Ceylon cinnamon. The result is fork-tender meat that slices cleanly against the grain and drinks up every drop of that richly spiced, slightly tangy sauce. Carrots and celery braise right alongside the beef, soaking up all that flavor and making this a genuinely complete, satisfying plate. Every ingredient here is naturally free of grains and grain derivatives — no fillers, no thickeners, no hidden starches — so you can serve it with total confidence. A scatter of fresh parsley over the top at the end adds a bright, herby finish that cuts through the richness beautifully. This is the kind of centerpiece dish that works just as well for a quiet Sunday dinner as it does for a table full of guests.

Preheat the oven to 325°F (165°C). Pat the brisket completely dry with paper towels, then season all over with the sea salt.
Heat the coconut oil in a large Dutch oven over medium-high heat until shimmering. Add the brisket fat-side down and sear, undisturbed, for 5–6 minutes until deep brown and releasing easily from the pan. Flip and sear the other side for 4–5 minutes until equally browned. Transfer the brisket to a plate.
