Slow-braised brisket is one of those deeply satisfying meals that fills the whole house with an aroma that makes everyone wander into the kitchen asking when dinner is ready. This version builds serious depth of flavor through a long, low oven braise with aromatics like fresh ginger, turmeric, and Ceylon cinnamon ā a warm, fragrant combination that makes the braising liquid taste almost like a rich, savory stew. The tricky part of avoiding citric acid in a braise like this is that many store-bought broths, juices, and vinegars sneak it in as a preservative, so the recipe leans on additive-free bone broth and 100% pomegranate juice to keep things clean without sacrificing any of that tangy brightness. Apple cider vinegar steps in to add just enough acidity to tenderize the meat and balance the richness, and it's naturally free of the additive concerns that come with processed citric acid products. After three-plus hours in the oven, the brisket becomes fork-tender and practically melts against the grain when sliced, soaking up every drop of that herb-laced braising liquid. The carrots and celery braise right alongside the meat, turning silky and sweet, so the whole platter comes together as a complete, comforting meal with very little extra effort.
