Slow-braised brisket is one of those deeply satisfying meals that fills the whole kitchen with an aroma that's hard to beat, and this version delivers on every level. The flat-cut brisket gets a proper sear in coconut oil before being nestled into a braising liquid built from pomegranate juice, apple cider vinegar, and additive-free bone broth ā no wine, no coffee, no tea, nothing that would sneak caffeine into the pot. Warm spices like Ceylon cinnamon and turmeric, along with fresh ginger, garlic, and woody herbs, give the braising liquid a complexity that tastes like it took far more effort than it actually did. After three-plus hours in a low oven, the meat becomes fork-tender and practically melts against the grain when sliced, soaking up all those layered, savory juices. The carrots and celery braise right alongside the beef, turning silky and sweet in the liquid, so you get a full, hearty plate without any extra sides required. A scatter of fresh parsley at the end brightens everything up and makes it look genuinely impressive on the table. This is the kind of recipe that works just as well for a relaxed Sunday dinner as it does for feeding a crowd.
