Preheat the oven to 400°F (205°C). Lightly coat a 9×13-inch baking dish with olive oil.
Melt the butter in a small saucepan over medium-low heat. Add the diced fennel and cook, stirring occasionally, until softened and translucent, about 5–6 minutes. Stir in the grated ginger and cook until fragrant, about 1 minute. Remove from heat and stir in the parsley, chives, and dill.
