There is something deeply restorative about a pot of soup built from scratch — real bones, real vegetables, and nothing else. This one starts with bone-in chicken simmered low and slow with apple cider vinegar, which helps draw out the collagen and minerals from the bones for a rich, nourishing broth you simply cannot get from a carton. Once the broth is strained and clear, hearty carrots, parsnips, sweet potato, and celery go in and cook until perfectly tender, giving every bowl a satisfying mix of textures and natural sweetness. Fresh thyme and rosemary do all the seasoning heavy lifting, so the flavor is complex without relying on any packaged broths, additives, or sneaky sweeteners that would otherwise knock a soup like this off the rails. Shredded chicken is stirred back in at the end, making it a complete, protein-packed meal in a single pot. A handful of fresh parsley on top adds a bright, herby finish that ties everything together beautifully. This is the kind of recipe that rewards patience — and your bowl will absolutely show it.

Place the chicken pieces in a large 6–8 qt stockpot and cover with 8 cups of cold water. Add the apple cider vinegar. Bring to a boil over medium-high heat, then immediately reduce the heat to a gentle simmer. Skim off any gray foam that rises to the surface during the first 10 minutes.
Once the broth is clear and the foam has been skimmed, add the thyme sprigs and rosemary sprigs. Partially cover the pot and simmer gently for 1 hour 30 minutes — do not exceed 2 hours 30 minutes total simmer time.
