There is something deeply restorative about a pot of slow-simmered chicken soup, and this version earns every bit of its name. Bone-in chicken pieces go into cold water with a splash of apple cider vinegar, which helps draw rich gelatin and minerals from the bones as the broth slowly develops over a long, gentle simmer. Once the broth is strained and clear, hearty root vegetables — carrots, parsnips, sweet potato, and celery — go in and cook until perfectly tender, filling the kitchen with an aroma that feels like a warm blanket. Every single ingredient here is naturally free of wheat, so there are no label-reading gymnastics or ingredient swaps required; it's just real, whole food doing its thing. The shredded chicken gets pulled from the bone and stirred back in at the end, making each bowl thick with meat and vegetables in a golden, herb-scented broth. Fresh rosemary and thyme do the heavy lifting on flavor, so the result tastes far more complex than the short ingredient list suggests. Finish with a handful of chopped parsley and serve it straight from the pot — this is the kind of soup that genuinely makes people feel better.

Place the chicken pieces in a large 6–8 qt stockpot and cover with 8 cups of cold water. Add the apple cider vinegar. Bring to a boil over medium-high heat, then immediately reduce the heat to a gentle simmer. Skim off any gray foam that rises to the surface during the first 10 minutes.
Once the broth is clear and the foam has been skimmed, add the thyme sprigs and rosemary sprigs. Partially cover the pot and simmer gently for 1 hour 30 minutes — do not exceed 2 hours 30 minutes total simmer time.
