There is something deeply restorative about a pot of soup built entirely from scratch — real bones, real vegetables, and nothing you can't pronounce. This one starts with bone-in chicken pieces simmered low and slow with a splash of apple cider vinegar, which helps draw rich gelatin and minerals from the bones into the broth. The liquid gets strained until it's beautifully clear, then loaded up with carrots, parsnips, sweet potato, and celery — hearty root vegetables that turn silky and tender without losing their character. Fresh thyme and rosemary do all the seasoning heavy lifting, so there's no need for anything processed or packaged. Every ingredient here is exactly what it looks like, which makes this the kind of recipe you can trust completely when you're eating clean and avoiding grains, legumes, or anything refined. A handful of fresh parsley stirred in at the end adds a bright, herby finish that pulls the whole bowl together. It's the kind of meal that genuinely earns the word "healing."

Place the chicken pieces in a large 6–8 qt stockpot and cover with 8 cups of cold water. Add the apple cider vinegar. Bring to a boil over medium-high heat, then immediately reduce the heat to a gentle simmer. Skim off any gray foam that rises to the surface during the first 10 minutes.
Once the broth is clear and the foam has been skimmed, add the thyme sprigs and rosemary sprigs. Partially cover the pot and simmer gently for 1 hour 30 minutes — do not exceed 2 hours 30 minutes total simmer time.
