There is something deeply comforting about a pot of chicken and vegetable soup simmering low and slow on the stove, and this one earns its name. Bone-in chicken pieces are gently coaxed into a rich, golden broth with nothing more than cold water and a splash of apple cider vinegar — no shortcuts, no additives, no cured or processed meats that sneak in unwanted preservatives. That matters more than it might seem, because a lot of store-bought broths and pre-seasoned chicken products carry hidden nitrates and nitrites that can be genuinely hard to avoid. Here, every single ingredient is whole and unprocessed, so you know exactly what's going into the bowl. Carrots, parsnips, sweet potato, and celery join the strained broth for the final stretch, turning tender and sweet as they soak up all that slow-built flavor. Fresh thyme and rosemary do the heavy lifting on aromatics, and a handful of flat-leaf parsley at the end keeps things bright. It's the kind of soup that feels like it's actually doing something good for you — because with ingredients this clean, it genuinely is.

Place the chicken pieces in a large 6–8 qt stockpot and cover with 8 cups of cold water. Add the apple cider vinegar. Bring to a boil over medium-high heat, then immediately reduce the heat to a gentle simmer. Skim off any gray foam that rises to the surface during the first 10 minutes.
Once the broth is clear and the foam has been skimmed, add the thyme sprigs and rosemary sprigs. Partially cover the pot and simmer gently for 1 hour 30 minutes — do not exceed 2 hours 30 minutes total simmer time.
