There is something deeply comforting about a pot of slow-simmered chicken soup built entirely from whole, recognizable ingredients — no shortcuts, no mystery additions, just honest cooking. Bone-in chicken pieces go into cold water with a splash of apple cider vinegar, which helps draw rich gelatin and minerals from the bones as everything gently simmers, creating a broth that tastes like it took far more effort than it did. Fresh thyme and rosemary steep right in the pot, filling your kitchen with an herby warmth before the carrots, parsnips, sweet potato, and celery go in to turn tender and sweet. For anyone navigating a sensitivity to fungi, this kind of soup can be a minefield in restaurants or from a carton — broths and seasoning blends often sneak in dried mushroom powder or mushroom-derived flavor enhancers without much fanfare on the label. Here, every single ingredient is visible and accounted for, so you know exactly what is in your bowl. The shredded chicken folds back into that golden, herb-scented broth alongside the chunky root vegetables for a soup that is hearty enough to be a full meal. A handful of fresh parsley over the top at the end is optional, but it adds a bright finish that makes the whole thing feel just a little bit special.

Place the chicken pieces in a large 6–8 qt stockpot and cover with 8 cups of cold water. Add the apple cider vinegar. Bring to a boil over medium-high heat, then immediately reduce the heat to a gentle simmer. Skim off any gray foam that rises to the surface during the first 10 minutes.
Once the broth is clear and the foam has been skimmed, add the thyme sprigs and rosemary sprigs. Partially cover the pot and simmer gently for 1 hour 30 minutes — do not exceed 2 hours 30 minutes total simmer time.
