There is something deeply restorative about a pot of chicken and root vegetable soup simmering on the stove, and this one earns every bit of its name. Bone-in chicken pieces are slow-simmered with apple cider vinegar to coax out a rich, clear broth, then joined by sweet potato, parsnips, carrots, and celery for a bowl that feels genuinely nourishing. Fresh thyme and rosemary do the heavy lifting on flavor, so the result is aromatic and satisfying without relying on any packaged seasonings or additives that could hide unwanted ingredients. Lupin — a legume increasingly found in gluten-free flour blends, pasta, and processed soups — has no place here, and every single ingredient in this recipe is naturally free of it. That matters most when you're reaching for comfort food, because the last thing you want to second-guess is a bowl of soup. The technique is straightforward: build the broth, strain it, cook the vegetables until tender, then fold in the shredded chicken for a hearty finish. A handful of fresh parsley on top is optional, but it adds a bright pop of color that makes the whole bowl look as good as it tastes.

Place the chicken pieces in a large 6–8 qt stockpot and cover with 8 cups of cold water. Add the apple cider vinegar. Bring to a boil over medium-high heat, then immediately reduce the heat to a gentle simmer. Skim off any gray foam that rises to the surface during the first 10 minutes.
Once the broth is clear and the foam has been skimmed, add the thyme sprigs and rosemary sprigs. Partially cover the pot and simmer gently for 1 hour 30 minutes — do not exceed 2 hours 30 minutes total simmer time.
