There is something deeply comforting about a pot of slow-simmered chicken and root vegetables bubbling away on the stove, and this soup delivers that feeling in every bowl. Bone-in chicken pieces are simmered low and slow with apple cider vinegar to draw out a rich, naturally golden broth — no sweeteners, no shortcuts, just real depth of flavor. The vegetables — carrots, parsnips, sweet potato, and celery — are added after straining so they cook to tender perfection without turning to mush. Fresh thyme and rosemary do all the heavy lifting in the flavor department, making this taste far more complex than the ingredient list suggests. Many packaged soups and broths sneak in honey or sweetener-based glazes, so making this entirely from scratch means you stay in full control of every ingredient. Finishing with a handful of fresh parsley brightens the whole pot and makes it look as good as it tastes. It's the kind of recipe you'll come back to every time the weather turns or someone in the house needs a little extra care.

Place the chicken pieces in a large 6–8 qt stockpot and cover with 8 cups of cold water. Add the apple cider vinegar. Bring to a boil over medium-high heat, then immediately reduce the heat to a gentle simmer. Skim off any gray foam that rises to the surface during the first 10 minutes.
Once the broth is clear and the foam has been skimmed, add the thyme sprigs and rosemary sprigs. Partially cover the pot and simmer gently for 1 hour 30 minutes — do not exceed 2 hours 30 minutes total simmer time.
