Warm, deeply savory, and built entirely from whole, unprocessed ingredients, this bone-in chicken and root vegetable soup is the kind of bowl that genuinely earns the word "healing." Carrageenan — a seaweed-derived thickener found in many packaged broths, canned coconut milk, and processed soups — is a common hidden ingredient that can be surprisingly hard to avoid when you're buying ready-made products. Here, the rich broth is made entirely from scratch: chicken pieces, cold water, and a splash of apple cider vinegar that helps draw collagen and minerals from the bones during the long, gentle simmer. No additives, no thickeners, no label-reading required. Carrots, parsnips, sweet potato, and celery give the soup real body and natural sweetness, while fresh thyme and rosemary layer in an herby depth that makes the whole kitchen smell incredible. Shredded chicken gets stirred back in at the end, making every spoonful hearty and satisfying. It's the rare recipe where doing things the slow, simple way also happens to be the cleanest and most nourishing option on the table.

Place the chicken pieces in a large 6–8 qt stockpot and cover with 8 cups of cold water. Add the apple cider vinegar. Bring to a boil over medium-high heat, then immediately reduce the heat to a gentle simmer. Skim off any gray foam that rises to the surface during the first 10 minutes.
Once the broth is clear and the foam has been skimmed, add the thyme sprigs and rosemary sprigs. Partially cover the pot and simmer gently for 1 hour 30 minutes — do not exceed 2 hours 30 minutes total simmer time.
