There is something deeply restorative about a pot of slow-simmered chicken and root vegetables, and this recipe delivers exactly that kind of nourishing, from-scratch comfort. Bone-in chicken pieces go into cold water with a splash of apple cider vinegar, which helps draw out the gelatin and minerals from the bones as the broth slowly builds over a gentle, unhurried simmer. Once the broth is strained and clear, hearty carrots, parsnips, sweet potato, and celery go in and cook until perfectly tender — each bite soft, sweet, and satisfying. Fresh thyme and rosemary do all the heavy lifting in the flavor department, so there's no need for store-bought stock or seasoning packets that might sneak in unwanted additives. Everything in this bowl is straightforwardly whole-food and naturally free of stimulants, making it an easy choice when you're being mindful about what goes into your body. A handful of fresh parsley scattered on top at the end adds a bright, herby finish that makes the whole thing feel a little more special. This is the kind of soup that earns a permanent spot in your weekly rotation.

Place the chicken pieces in a large 6–8 qt stockpot and cover with 8 cups of cold water. Add the apple cider vinegar. Bring to a boil over medium-high heat, then immediately reduce the heat to a gentle simmer. Skim off any gray foam that rises to the surface during the first 10 minutes.
Once the broth is clear and the foam has been skimmed, add the thyme sprigs and rosemary sprigs. Partially cover the pot and simmer gently for 1 hour 30 minutes — do not exceed 2 hours 30 minutes total simmer time.
