There is something deeply comforting about a pot of chicken and vegetable soup simmering on the stove, and this one earns its name. Bone-in chicken pieces are slow-simmered with apple cider vinegar to draw out a rich, naturally golden broth — no shortcuts, no packets, no mystery additives. Carrots, parsnips, sweet potato, and celery go in after straining, so every vegetable cooks in that clean, homemade stock until perfectly tender. Fresh thyme and rosemary do all the heavy lifting in the flavor department, meaning there is zero need for dye-laden seasoning blends or store-bought broths that can hide synthetic colorants in their ingredient lists. The shredded chicken gets pulled from the bone and stirred back in, giving you hearty, satisfying spoonfuls in every bowl. A handful of fresh parsley on top adds a bright finish that is as beautiful as it is natural. This is the kind of soup that feels like it is doing something good for you — because it genuinely is.

Place the chicken pieces in a large 6–8 qt stockpot and cover with 8 cups of cold water. Add the apple cider vinegar. Bring to a boil over medium-high heat, then immediately reduce the heat to a gentle simmer. Skim off any gray foam that rises to the surface during the first 10 minutes.
Once the broth is clear and the foam has been skimmed, add the thyme sprigs and rosemary sprigs. Partially cover the pot and simmer gently for 1 hour 30 minutes — do not exceed 2 hours 30 minutes total simmer time.
