There is something deeply satisfying about a soup that starts with nothing but chicken, cold water, and a splash of apple cider vinegar — and ends up tasting like it has been simmering with intention all day. Every drop of flavor here comes from real, whole ingredients: bone-in chicken pieces, earthy carrots and parsnips, sweet potato, celery, and fresh sprigs of thyme and rosemary that perfume the broth as it slowly develops. No flavor packets, no bouillon cubes, no mystery seasonings — just honest cooking that rewards patience. The long, gentle simmer draws collagen and richness from the bones, while the vinegar quietly helps coax every bit of goodness out of the chicken before the vegetables even hit the pot. Once the broth is strained and the root vegetables go in, the whole thing transforms into something hearty and nourishing without feeling heavy. It is the kind of soup that genuinely earns the word "healing" — not as a marketing claim, but because you can taste exactly what went into it.

Place the chicken pieces in a large 6–8 qt stockpot and cover with 8 cups of cold water. Add the apple cider vinegar. Bring to a boil over medium-high heat, then immediately reduce the heat to a gentle simmer. Skim off any gray foam that rises to the surface during the first 10 minutes.
Once the broth is clear and the foam has been skimmed, add the thyme sprigs and rosemary sprigs. Partially cover the pot and simmer gently for 1 hour 30 minutes — do not exceed 2 hours 30 minutes total simmer time.
