There is something deeply satisfying about a bowl of soup that is built entirely from real, whole ingredients — no shortcuts, no hidden sweeteners, just honest cooking. This broth starts with bone-in chicken simmered low and slow with apple cider vinegar, which helps draw out the rich, savory depth you'd normally only find in a restaurant kitchen. Carrots, parsnips, sweet potato, and celery go in after straining, so every vegetable cooks in that clean, golden broth until perfectly tender. The natural sweetness you taste comes entirely from the root vegetables themselves — no added sugar, no flavor shortcuts needed. Fresh thyme and rosemary do the heavy lifting on aromatics, and a handful of flat-leaf parsley at the end keeps things bright. It's the kind of recipe that proves you don't need anything extra to make something genuinely nourishing and full of flavor.

Place the chicken pieces in a large 6–8 qt stockpot and cover with 8 cups of cold water. Add the apple cider vinegar. Bring to a boil over medium-high heat, then immediately reduce the heat to a gentle simmer. Skim off any gray foam that rises to the surface during the first 10 minutes.
Once the broth is clear and the foam has been skimmed, add the thyme sprigs and rosemary sprigs. Partially cover the pot and simmer gently for 1 hour 30 minutes — do not exceed 2 hours 30 minutes total simmer time.
