Sweet potatoes are already a nutritional powerhouse, and this preparation turns them into something genuinely showstopping — fanned out in delicate slices, caramelized at the edges, and drenched in a warm, golden herb oil that smells absolutely incredible coming out of the oven. The turmeric and fresh ginger bring anti-inflammatory depth, while the cinnamon and a touch of maple syrup add just enough sweetness to balance the savory garlic. These are ingredients worth leaning into during pregnancy, and every one of them here is whole, recognizable, and intentionally chosen. The hasselback technique sounds fancy but is surprisingly approachable — a couple of chopsticks do all the hard work of keeping your cuts even. A two-stage roast means the flesh gets completely tender before the slices crisp up at the tips, giving you that perfect contrast of soft and slightly crunchy in every bite. Finished with fresh parsley, thyme, and an optional scatter of pomegranate seeds, this dish is as beautiful on the table as it is nourishing on the plate.

Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
Place one sweet potato on a cutting board between two wooden chopsticks or the handles of two wooden spoons laid flat — these act as a depth stop. Using a sharp chef's knife, make crosswise cuts every 1/4 inch along the length of the potato, cutting down until the knife rests on the chopsticks (about two-thirds of the way through). Repeat with the remaining potatoes.
