Roasted eggplant stuffed with a spiced chickpea and bulgur filling is the kind of dinner that looks like it took serious effort but comes together in under an hour for four people. The filling layers harissa paste with ground turmeric, cumin, and coriander — a lineup of spices that reads like a greatest-hits list for fighting inflammation — then brightens everything with fresh orange zest and juice so the heat never feels heavy. Eggplant itself is rich in antioxidants, and pairing it with chickpeas and whole-grain bulgur cooked in vegetable broth means every bite is genuinely nourishing, not just technically compliant. The crosshatch scoring and high-heat roasting at 425°F coax the flesh into something silky and almost buttery before it ever meets the filling. A quick broil at the end chars the edges of the filling just enough to add smoky depth without any processed ingredients sneaking in. Fresh parsley and mint folded in at the last minute keep the whole dish feeling alive, and optional pomegranate seeds and tahini drizzle turn it into something you'd genuinely want to photograph. It's bold, colorful, and satisfying in a way that makes eating well feel like an actual treat.

Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper.
Score the cut side of each eggplant half in a crosshatch pattern, cutting about 3/4 inch deep but not through the skin. Brush the cut sides with 2 tbsp of the olive oil and season with 1/4 tsp of the salt and the black pepper. Place cut-side down on the prepared baking sheet and roast for 25–30 minutes, until the flesh is completely tender when pierced with a knife and the skin is slightly wrinkled.
