Heat the olive oil in a large 6-quart Dutch oven or heavy-bottomed pot over medium-high heat until shimmering. Add the lamb pieces in a single layer and sear, undisturbed, for 3–4 minutes per side until deeply browned on at least two sides. Work in batches if needed to avoid crowding. Transfer the browned lamb to a plate and set aside.
Reduce the heat to medium. Add the diced onion to the same pot and cook, stirring occasionally, until softened and translucent, about 5–6 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute, watching closely so it does not brown.
