Taco night gets a serious upgrade when the shells are made from smashed, oven-crisped green plantains instead of anything from a box. The edges turn golden and crackly in the oven, and the two-step bake — round first, then pressed flat and returned to the heat — gives you that satisfying crunch without a drop of egg or any binder at all. The turkey filling is where things get really interesting: turmeric, Ceylon cinnamon, ginger, and oregano come together with coconut aminos and apple cider vinegar for a warmly spiced, slightly tangy mixture that tastes far more complex than the ingredient list suggests. Everything is finished with creamy avocado, crisp shredded cabbage, fresh cilantro, and a squeeze of lime, so each bite has brightness and texture to balance the savory meat. Because the whole recipe leans on whole-food ingredients — coconut oil, bone broth, fresh produce — there's no need to scan labels for hidden egg derivatives the way you might with a store-bought taco kit or seasoning packet. It's the kind of meal that looks impressive on the plate but comes together in one skillet and one sheet pan, which means cleanup is as easy as the cooking.
