This colorful one-pan dinner is exactly the kind of weeknight meal that feels satisfying without any of the ingredients that tend to derail a candida-conscious eating plan. Lean ground turkey gets browned until perfectly cooked, then reunited with tender zucchini, sweet red bell pepper, and a generous pile of wilted baby spinach — all real, whole foods with no hidden sugars or fermented additives to second-guess. Instead of soy sauce, coconut aminos bring a subtle savory depth, and a splash of apple cider vinegar adds brightness while keeping the flavor profile clean and intentional. Cumin, smoked paprika, and turmeric layer in warmth and color, turning a simple skillet into something that genuinely smells incredible while it cooks. The scallion greens (used in place of the bulb) and fresh garlic round everything out without relying on any ingredients that commonly cause concern. It all comes together in about 30 minutes and serves four, making it a practical go-to for meal prep or a fast family dinner. Finish it with a handful of fresh parsley and you've got a dish that looks as good as it tastes.

Coconut aminos is a common stand-in for soy sauce on a candida diet. It does carry a little sugar from coconut sap, but this recipe uses only about 3/4 teaspoon per serving, which is likely fine.

Heat 1 tbsp of the olive oil in a 12-inch skillet over medium-high heat until shimmering. Add the ground turkey, season with 1/2 tsp of the salt and the black pepper, and cook, breaking it up with a wooden spoon, until no pink remains and the turkey registers 165°F (74°C) on an instant-read thermometer, about 7–8 minutes. Transfer the cooked turkey to a plate and set aside.
Reduce the heat to medium and add the remaining 1 tbsp olive oil to the same skillet. Add the bell pepper and zucchini and cook, stirring occasionally, until softened and lightly golden at the edges, about 5–6 minutes.
