Heat the vegetable oil in a large skillet or wok over medium-high heat until shimmering. Add the green curry paste and cook, stirring constantly, for 1–2 minutes until fragrant and the paste darkens slightly.
Pour in about one-third of the coconut milk (roughly 1/2 cup) and stir vigorously to combine with the paste. Cook for 2–3 minutes, stirring frequently, until the mixture thickens slightly and the oil begins to separate and pool at the edges.
