Few centerpiece roasts deliver the kind of deep, soul-satisfying flavor that a slow-braised leg of lamb does, and this Greek-inspired version is genuinely hard to beat. Garlic slivers are pressed directly into the meat before a fragrant paste of olive oil, lemon, oregano, rosemary, thyme, turmeric, and ginger gets rubbed into every crevice — so the flavor goes all the way through, not just across the surface. An overnight rest in the refrigerator lets those aromatics really sink in, and the long, covered roast in bone broth keeps the meat impossibly tender before a final blast of high heat crisps up that golden exterior. The whole dish is built from fresh herbs, citrus, and pantry spices, so there's no need to scan labels or worry about unexpected nut-based ingredients sneaking into your meal. Pan juices pooling beneath the lemon rounds and rosemary sprigs become a natural, glossy sauce you'll want to spoon over every slice. A 20-minute rest before carving is the one step you absolutely shouldn't skip — it's what keeps all that hard-won moisture locked inside the meat. Scatter over fresh parsley and a few lemon wedges to serve, and this becomes the kind of roast people talk about long after the plates are cleared.
