Pat the lamb cubes dry with paper towels and season lightly with salt. Heat the coconut oil in a large Dutch oven or deep skillet over medium-high heat until shimmering. Add the lamb in a single layer — work in two batches if needed to avoid crowding — and sear for 3–4 minutes per side until deeply browned on at least two sides. Transfer the browned lamb to a plate and set aside.
Reduce the heat to medium. Add the red curry paste to the same pot and cook, stirring constantly, for 1–2 minutes until fragrant and the paste darkens slightly.
