Roasting tomatoes under the broiler until their skins blister and char is the move that separates a truly great salsa from anything you'd pull off a grocery store shelf. The high heat coaxes out a deep, smoky sweetness from the roma tomatoes and jalapeños that no amount of raw chopping can replicate. Onion and garlic go on the same pan, and once everything comes out of the oven, a quick pulse in the blender brings it all together into a chunky, cohesive sauce with real body and texture. Fresh lime juice and cilantro brighten the whole thing at the end, and a pinch of cumin ties the smoky and fresh notes together beautifully. Every single ingredient here is naturally free of gluten, so there's no swapping, substituting, or label-squinting required — just real, whole produce doing exactly what it's supposed to do. It makes eight servings, which means it's just as at home on a party spread as it is in your fridge for weeknight chip dipping or taco topping. Once you taste how much better homemade roasted salsa is, the jarred stuff is going to have a hard time making a comeback.
