Snow peas are pods and are low in starch, so they are usually fine on a candida diet even though beans and peas are limited early on. Bring a medium pot of water to a boil. Add the rice noodles and cook according to package directions until just tender, about 4–6 minutes. Drain, rinse under cold water to stop cooking, and set aside.
Heat the sesame oil in a large pot over medium heat until shimmering. Add the carrots and celery and cook, stirring occasionally, until slightly softened, about 4 minutes.
