A serving of up to about one small jalapeño is low in fructose. This recipe contains only about 1/4 of a jalapeno per serving, making it likely Low Fructose. If you prefer to always avoid jalapeño, please tap it and change its rating to Red.







Drain the tofu and press it between several layers of paper towels, placing a heavy skillet or cutting board on top, for 15 minutes until most of the surface moisture is removed. Cut the pressed tofu into 3/4-inch cubes.
While the tofu presses, combine the pineapple, tomatoes, red onion, jalapeño, cilantro, lime juice, and 1/4 tsp salt in a mixing bowl. Stir to combine and set aside at room temperature so the flavors come together.
