Combine the rinsed lentils and 2 1/2 cups water in a medium saucepan and bring to a boil over high heat. Reduce the heat to low, cover, and simmer for 20–25 minutes, until the lentils are tender but still hold their shape and the water is absorbed. Drain any excess liquid through a fine-mesh strainer and set aside.
While the lentils cook, make the pineapple pico: combine the diced pineapple, tomatoes, red onion, jalapeño, cilantro, 2 tbsp lime juice, and 1/4 tsp salt in a mixing bowl. Stir to combine and set aside at room temperature to let the flavors come together.
