Heat 1 tbsp of the olive oil in a large (12-inch) skillet over medium-high heat until shimmering. Add the mushrooms in a single layer and cook undisturbed for 3 minutes, then stir and continue cooking until the mushrooms are golden brown and any released liquid has evaporated, about 3–4 minutes more.
Reduce the heat to medium. Add the garlic and red pepper flakes and cook, stirring constantly, until fragrant, about 1 minute, watching closely so the garlic does not brown.
