Bring a large pot of salted water to a rolling boil. Add the live lobsters headfirst and cook for 8β9 minutes, until the shells are bright red and the tails curl firmly. Transfer to a cutting board and let cool for 10 minutes. Twist off the tails and claws, crack the shells, and remove all the meat. Cut the meat into rough 1-inch chunks and refrigerate. Reserve all shells and any accumulated juices.
Wipe out the large pot and set it over medium-high heat. Add 1 tbsp butter and 1 tbsp olive oil. Once the butter foams, add the reserved lobster shells and cook, stirring occasionally, for 4β5 minutes, until the shells are lightly toasted and fragrant. Add the roughly chopped carrot, celery, and onion and cook for 3β4 minutes, until the vegetables begin to soften at the edges.
