Gyudon — Japanese beef bowl — is one of those deeply satisfying weeknight meals that feels far more special than the effort it takes to pull together. Thinly sliced ribeye simmers with sweet onions in a savory-sweet broth built from dashi, tamari, mirin, sake, and a touch of sugar, then gets ladled over fluffy short-grain rice for a bowl that's genuinely comforting from the first bite. The key to making this work without gluten is swapping in tamari and a certified gluten-free dashi stock, since traditional soy sauce and some dashi products can sneak in wheat — both of which are naturally rye-free as well. That small swap keeps the umami depth completely intact while making the dish safe for anyone avoiding grains like rye or wheat. Optional jammy soft-boiled eggs, sliced scallions, toasted sesame seeds, and pickled red ginger take each bowl from weeknight dinner to something that genuinely looks and tastes restaurant-worthy. The broth alone is worth making — rich, slightly sweet, and savory enough that you'll want to sip whatever's left in the pan.

Rinse the rice in a medium saucepan under cold water, swirling and draining 3–4 times until the water runs mostly clear. Add 2 1/2 cups fresh water, cover, and bring to a boil over medium-high heat. Reduce heat to the lowest setting and cook, covered, for 12 minutes. Remove from heat and let steam, still covered, for 10 minutes.
While the rice cooks, combine the dashi stock, tamari, mirin, sake, and sugar in a large skillet or wide saucepan. Bring to a simmer over medium heat, stirring until the sugar dissolves.
