This Japanese beef bowl is deeply savory and satisfying — silky ribbons of thinly sliced ribeye simmered with sweet onion in a rich dashi broth that soaks right into the steamed rice beneath. The flavor is umami-forward and comforting in a way that feels like a proper restaurant bowl, not a compromise. Nightshade-free cooking can get tricky with Japanese-inspired dishes since many sauces and condiments sneak in unexpected ingredients, but this broth keeps things clean with tamari, mirin, sake, and sugar — no hidden tomato paste or chili-based seasonings anywhere. Tamari stands in for conventional soy sauce and keeps the whole dish gluten free at the same time, so it's genuinely pulling double duty. The onion softens into the broth until it's almost jammy, adding natural sweetness that balances the savory depth beautifully. A jammy soft-boiled egg on top takes it over the edge, and the optional scallion and sesame garnishes add a little freshness and crunch without complicating anything. This is the kind of weeknight bowl that feels indulgent but comes together with a short ingredient list and one skillet.

Rinse the rice in a medium saucepan under cold water, swirling and draining 3–4 times until the water runs mostly clear. Add 2 1/2 cups fresh water, cover, and bring to a boil over medium-high heat. Reduce heat to the lowest setting and cook, covered, for 12 minutes. Remove from heat and let steam, still covered, for 10 minutes.
While the rice cooks, combine the dashi stock, tamari, mirin, sake, and sugar in a large skillet or wide saucepan. Bring to a simmer over medium heat, stirring until the sugar dissolves.
