This Japanese beef bowl is pure comfort food — savory, deeply flavored, and surprisingly simple to pull together on a weeknight. Thinly sliced ribeye simmers with soft, sweet onions in a broth built from dashi, tamari, mirin, and sake, creating that signature umami-rich sauce that soaks beautifully into a bowl of fluffy short-grain rice. Using tamari in place of conventional soy sauce keeps things gluten free without sacrificing any of that deep, salty depth the dish is known for. The broth comes together fast, and the beef only needs a few minutes in the pan — the goal is tender, just-cooked slices, not tough or overdone. Optional jammy soft-boiled eggs add a rich, creamy contrast that takes each bowl to the next level. A scatter of scallions, sesame seeds, and tangy pickled red ginger on top rounds everything out with color and brightness. Every ingredient here is naturally free of coconut in any form, so you can focus entirely on getting the flavors right.

Rinse the rice in a medium saucepan under cold water, swirling and draining 3–4 times until the water runs mostly clear. Add 2 1/2 cups fresh water, cover, and bring to a boil over medium-high heat. Reduce heat to the lowest setting and cook, covered, for 12 minutes. Remove from heat and let steam, still covered, for 10 minutes.
While the rice cooks, combine the dashi stock, tamari, mirin, sake, and sugar in a large skillet or wide saucepan. Bring to a simmer over medium heat, stirring until the sugar dissolves.
