This whole grilled fish is about as clean and simple as Mediterranean cooking gets: two whole fish stuffed with garlic, lemon rounds, and fresh thyme, rosemary, and parsley, then charred over high heat until the skin crackles and the flesh flakes at the touch of a fork. The herb oil finishing drizzle — bright with lemon juice, chopped parsley, and good olive oil — is exactly the kind of fresh, unfussy sauce this style of eating is built on. There's no heavy breading or dairy-laden sauce weighing it down, just olive oil, citrus, garlic, and a generous handful of herbs doing all the work. Grilling whole fish this way keeps the flesh moist and full of flavor while letting the aromatics from the cavity perfume every bite. Finished with lemon wedges and torn parsley at the table, it's a light, satisfying centerpiece that fits beautifully into a Mediterranean-style spread.

Pat the fish dry inside and out with paper towels. Using a sharp knife, cut 3 diagonal slashes about 1/2 inch deep on each side of both fish, spacing them evenly from head to tail.
Rub 1 tbsp of the olive oil all over the outside of both fish, including into the slashes. Season the cavities and the exterior generously with the kosher salt and black pepper.
