Slice the duck breasts against the grain into strips about ¼ inch thick. In a medium bowl, toss the duck strips with 2 tbsp tamari, 1 tbsp cornstarch, and 1 tsp sesame oil until evenly coated. Set aside to marinate for 15 minutes at room temperature.
While the duck marinates, whisk together the sauce ingredients in a small bowl: 3 tbsp tamari, rice vinegar, honey, 1 tsp cornstarch, and 1 tsp sesame oil. Set aside.
