Bring a large pot of generously salted water to a boil. Cook the gluten free elbow pasta according to the package directions until just tender — gluten free pasta can go from al dente to mushy quickly, so start checking 1–2 minutes before the package time. Reserve 1/2 cup of the pasta cooking water, then drain the pasta in a colander and set aside.
In a small bowl, whisk together the cornstarch and cold water until completely smooth with no lumps. Set the slurry aside.
