In a large mixing bowl, whisk together 2 tbsp of the olive oil, 3 tbsp lime juice, 2 tbsp cilantro, cumin, smoked paprika, garlic powder, 1/2 tsp salt, and black pepper until combined. Slice the portobello caps into 1/2-inch strips, add them to the bowl, and toss to coat. Let the mushrooms marinate at room temperature for 20 minutes.
While the mushrooms marinate, combine the shredded cabbage, 1 tbsp lime juice, 1 tbsp cilantro, and 1/4 tsp salt in a medium bowl. Toss well and set aside.
